  • 10 medium tilapia fillets cut into 6 pieces
  • 5 cup fresh breadcrumbs (see note)
  • 1.67 cup chopped parsley
  • 10 garlic cloves (minced)
  • 10 tbsp melted butter
  • salt and pepper to taste
  • lemon wedges to serve

  1. Preheat the oven to 400F. Place the tilapia pieces on a baking sheet coated with cooking spray. Sprinkle the fish with salt and pepper and set aside.
  2. In a mixing bowl, combine bread crumbs, parsley, garlic, and butter.
  3. Divide the mixture between the fish pieces and coat them evenly. Press the crumbs on with your hands slightly to make sure that they are covering the fish nicely.
  4. Bake the fish for 15-20 minutes, or until it is white and flakes easily, and the crumbs are golden brown.
  5. Serve with lemon wedges.

To make a cup of fresh breadcrumbs, just place 4 slices of slightly stale (at least one-day old) bread in a food processor and process until breadcrumbs form. Italian or regular white bread will work the best for this recipe.
