Fixings :

  • Gyoza Wrappers 
  • 75 g plain flour 
  • 75 g bread cook’s flour 
  • 90 ml boiling water 

Gyoza Filling 

  • 250 g pork and veal blended mince 
  • 1 measure of finely slashed Chinese cabbage 
  • 1 measure of finely slashed shallots 
  • 1 tbs soy sauce 
  • 1 tbs purpose 
  • 1 tbs sesame oil 
  • 1/2 tbs ginger juice 
  • 1 tsp salt 


  • 2 x 5 g parcels of Torigara soup chicken bone stock 
  • 1.2 L water 
  • 1 tsp soy sauce 
  • 1 tsp ground ginger 
  • 1 tsp sesame oil 
  • 2 tsp white sesame coarsely ground 
  • Salt and pepper to taste 
  • 2 leaves of Chinese cabbage 
  • Finely slashed shallots to decorate 

Guidelines :

  1. Gyoza Wrappers 
  2. Spot all the flour and water in a blender and kneed for around 5 minutes. 
  3. Fold it into a round shape and wrap it with cling wrap at that point put aside for 60 minutes.
